Pumpernickel is a very healthy bread due to the flour choice and addition of various seeds/nuts. Under the umbrella that is the rye bread family, the pumpernickel name (apparently) has origin to the German words ‘flatulent’ and ‘goblin’. YES, I laughed to! Perhaps due to the high fibre content and the fact that most pumpernickel and rye breads are easier on our digestion.
This is a good one for your freezer and when you’re at a loss and can’t be bothered to bake - you’ll have a healthy slice of toast waiting for you.
